I often say that this meal was the one that made my husband marry me! It is so simple, it is just mayonnaise coating a chicken breast that is dredged in Italian bread crumbs. It is so moist, tender and scrumptious.
This go around, I made a variation to the traditional “Greatest Chicken Ever”. In my med school home, Jeannie had her birthday! Jeff (the other roomie) and I cooked her a birthday feast! Jeff took care of the sides of garlic mashed potatoes & gravy and mac ‘n’ cheese. I took care of Ghirardelli brownies and the Greatest Chicken Ever 2.0.
The 2.0 is using the Caesar salad dressing, which may seem strange, but Caesar dressing has so many delicious flavors in it: lemon, anchovies, mayonnaise, salt, pepper, etc. It packs a lot of flavor punch with just a small hit of dressing. If you want to make the “Original Greatest Chicken Ever” just swap out the Caesar dressing with Hellman’s Light Mayonnaise.
Still not convinced you need to make this meal? Let me tell you more. This is great to feed a crowd, especially parties. You can make it the night before and heat it up in the oven. I have made my own “T.V. dinners” with it. I make a ton of chicken, cut it into bite sized pieces and toss into a plastic air tight container with a side of corn, potatoes and roasted carrots. I place it in the freezer until I am ready to use it. From here, I can toss it in a lunch box (frozen) and it will be thawed by lunch to heat in a microwave. It can also be taken directly from the freezer to the microwave. It is a fantastic recipe to have up your sleeve when you are in a pinch!
You will need:
1lb chicken breast
1/2- 1 cup Caesar salad dressing
1 cup Italian seasoned bread crumbs
9″ x 13″ pan
Pre-heat over to 350F
Pretty easy, right? Being the time lacking student that I am (and I passionately hate to dishes, I am sure you do too), I made it the laziest way possible….no dredging stations!
I placed the chicken breasts in the pan and dumped enough Caesar dressing to evenly coat the one side of the chicken, then flipped the chicken over to coat the other side evenly.
Next, I sprinkled on the breadcrumbs directly on top of the chicken, flipped the chicken and did the same to the other side.
Tossed it into a 350F oven for about 20-30 minutes, just make sure your chicken is cooked completely through. You can choose to cover it, but the bread crumbs won’t be as crispy (but still equally delicious).
