Fresh Pineapple Salsa Recipe for Perfect Summer Dishes
Living in southern beach towns, I’ve come to love the versatility of fresh fruit salsas. They provide a burst of freshness and give that perfect pop of sweet and spicy. I made a pineapple salsa that combines all the familiar favorites of salsa plus that punch of sweet and tartness from the pineapple. Use it as salsa, pour it over grilled fish or chicken, serve it over sticky rice… the possibilities are endless.
Ingredients:
Half of a Pineapple, diced.
A small container of Cherry Tomatoes, diced.
1 Jalapeño, diced.
Half of a Red Onion, diced
A small handful of Fresh Cilantro, roughly chopped (omit if you are one of those people who hate it, haha).
1 Lime

Instructions:
In a large bowl, mix together the diced, pineapple, cherry tomatoes, jalapeño and onion. Give this a toss. Squeeze in the juice from the lime and the cilantro. Toss again. And that is it! Serve it up with chips or put it on top of a juicy piece of grilled chicken.
