Being from Ohio and living in a place where Ohio State Football is a religion, there is something to be said about the “state candy”. Well, my Grandma, Sally Martin, made the best buckeyes around. Being a good Ohio native, it would be a tragedy not to share it!
You will need:
3/4 Margarine (melted)
2 cups creamy peanut butter
3 cups of powdered sugar
12 oz. chocolate chips (semi-sweet or milk)
1″ square of parafin
In a bowl, mix together the melted margarine, peanut butter and powdered sugar. Once well mixed, roll the mixture into 1″ balls. Once peanut butter balls are rolled, place on a cookie sheet in the refrigerator for 2 hours.
While those chill, at the 1 hour and 45 minute mark, get the chocolate ready. Over a double boiler, melt together the chocolate chips and the parafin, on low heat. Be careful not to burn the chocolate!
Once the chocolate is ready and the peanut butter balls are ready, this is where the buckeyes are formed. Place a toothpick into the peanut butter ball and dip into the chocolate. You want to dip the ball until the chocolate comes up to about 3/4 of the way. Then pull out the chocolate covered peanut butter ball and place on a wax paper covered cookie sheet. Once dipped, they can be placed in the refrigerator until hardened slightly.
These are delicious (even for the non-Ohio State fans). Bring to any gathering and I promise you, they will disappear!
