This is one “jacked up” grilled cheese. It combines the cheesy goodness of grilled cheese with the attitude of buffalo wings. It is so simple to make and there are a few tricks up my sleeve to really push this grilled cheese over the edge.
You will need:
1 chicken breast
1/2 cup of shredded mexican style cheese
1/2 cup of hot sauce (whatever suits your fancy: Texas Pete, Red Hot, Louisiana Hot sauce, etc.)
2 tsp mayonnaise
2 slices of bread (whatever you like)
Ranch dressing or Bleu cheese dressing for dipping
1 sheet of aluminum foil
Let me fill you in on a little secret, mayonnaise. If you have always covered your bread with butter, then grilled your cheese…you are about to have your world rocked! Spreading a thin layer of mayonnaise instead of the butter packs in so much flavor and it gives it that amazing golden brown crunch that we all know and love. Think of a grilled cheese from a diner, how the bread is so crisp and golden,that is because they used mayo and not butter.The secret is out!
Alright, fire up your oven to 350F. Take the chicken breast and dice it into small 1/2″ pieces. Place in in a “foil packet” and slather it with the hot sauce. Bake it until the chicken is cooked all the way through. When steaming in a foil packet, the steam gets trapped inside so there may be a little bit of liquid, just pull the chicken out and place it in a seperate bowl and dump the remaining liquid and foil. In the bowl with the chicken feel free to add a few more dashes on the chicken after to spice it up.
Smear both slices of bread with the mayonnaise (only coat 1 side of each slice).
With the mayonnaise facing down on a plate, add 1/4 cup of the cheese to the bread. Follow by adding half of the diced and sauced chicken.
Top with the remaining cheese and top with the remaining bread slice (mayo side up).
Now, place this jacked up grilled cheese in a pan over medium-low. You will see cheese starting to melt and once the bottom slice is completely golden, flip the sandwich. This will be a thick and heavy sandwich so you might want to 2 spatula this bad boy.
Once the other side is completely golden brown, take it off the heat, serve it up on a plate. I garnished mine with a side of ranch dressing to dunk it in! Bleu Cheese dressing would also be delicious. Put a side of celery and carrots with it and you will never “B-Dubs” again.
