Valentine’s Day is coming up and I have the perfect sweet treat! Rice crispy treats are absolutely the best lunch box treat. Gooey marshmallow, warm butter and crispy cereal. They are easy to make and easy to eat. If you are like me, you have a chocolate obsession! My hubby and I love chocolate sandwich cookies, so when I was trying to think of a new treat, this seemed like a great idea. What if I told you we could make crispy treat bars better? Chocolate sandwich cookies replace the crispy cereal in this classic lunch box favorite!
You Will Need:
64 Chocolate sandwich cookies
6 TBSP butter
1 lb. of marshmallows
Simple enough, right?
Line a 13×9 pan with plastic wrap.
In a large pot over low heat, add 6 TBSP of butter.
Toss in the marshmallows.
Stir to coat the marshmallows with butter.
Stir until the marshmallows melt.
While the marshmallows melt, add 64 chocolate sandwich cookies to a food processor and pulse until the cookies are ground. If you don’t have a food processor, just crush with a rolling pin until there are finely ground cookie pieces.
Once the marshmallows and butter is melted and combined, dump in the cookie crumbs.
Stir together until combined.
Dump the mixture into the pan and spread into an even layer.
Allow to cool and the cookie treats to set.
Cut into bars!
If you want to pack these in a lunchbox for an extra special treat, wrap individual bars in a piece of plastic wrap. These are great for tailgating, sporting events, lunch boxes, snack on the go, birthday parties, etc.
