Tex-Mex Lasagna On The Go
What to take to work for lunch? Tex-Mex Lasagna On The Go! Everyone with a busy schedule finds themselves in a culinary rut from time to time. The options tend to boil down to PB&J, left-overs or eat out. This can get rather boring. This Tex-Mex Lasagna On The Go recipe will give you a delicious lunch that heats up well in a microwave and is super easy to make. The bonus is that it will give you plenty of individual lasagnas (enough for 2 people) for the entire work week. Cook one time, get 10 meals. Not a bad deal!
You will need:
10- 12″ Sun-Dried Tomato Tortillas (you can use any other flavor, Sun-Dried Tomato gives this dish a little bit of warmth and flavor)
2 packages of Taco Seasoning
5-7 dashes of Hot Sauce (optional)
1/2 cup Frozen Corn Kernels
1/2 cup Water (Divided into 2 portions, 1/4 cup each)
5 cups Shredded Mexican Blend Cheese
1 package of Knorr Rice Sides Chicken Flavor (buy it Here)
1 lb. Ground Beef (or ground turkey)
10- 25 oz. Food Storage Containers (buy them Here)
Extra Toppings Suggestions: Sour Cream, Salsa, Guacamole, Lettuce, Jalapenos, Hot Sauce.
Extra Filling Suggestions (just add to the beef and corn mixture cooking stage): Black Beans, Pinto Beans, Bell Peppers, Onions, Jalapenos, etc.
Filling:
First thing first, mix together 1 package (not both) of taco seasoning with 1/4 cup of water in a large pot. Once mixed, add the ground beef (and any “Extra Filling Suggestions”).

Cook the beef until almost cooked through, then add the frozen corn.

Next, add the remaining package of taco seasoning and 1/4 cup of water.

Cook Knorr Rice Sides Chicken Flavor according to the directions on the package.


Once the beef/corn mixture is done & the rice is done, combine them, stir well!

Tip: If the filling is a bit dry (like you left it on the heat just a smidge too long), you can add a little water to the mixture. That should help!
Set aside to cool.
Assembly:
Take 1 large tortilla and tear it into 4 equal pieces.


Place 1 piece in the bottom of the container.

Add a few spoonfuls of meat, corn, and rice mixture.

Top with cheese.

Add another tortilla.

Repeat this until all 4 pieces of the tortilla are used.

Repeat for the remaining 9 containers. And store in the refrigerator.
Cook:
Once at work and ready to eat lunch, place the container in the microwave. Cook for about 2 minutes or until the filling is hot and the cheese is melted.

(I used Wheat Tortillas for this batch)
Tips:
If you have any extra filling and don’t want to make more Tex-Mex Lasagna, use it for Burritos, Quesadillas, Taco Salads, Tacos, Nachos, etc.
