I am obsessed with The Cap City Diner, owned by none other than Cameron Mitchell. Being 4,200 miles away from the nearest restaurant I had to learn how to make my own Bleu Cheese Chips. This is the dish that changed my entire perspective on Bleu Cheese! This converted me into a bleu cheese aficionado.
You will Need:
1 large bag of Kettle Cooked Potato Chips
1 wedge of Bleu Cheese
2 C. Heavy Whipping Cream
1 TBSP butter
2 TBSP Corn Starch
3 TBSP diced white onion
4 cloves Garlic
Black Pepper to Taste
In a pot, add butter, garlic and onion and cook until they start to become a golden brown color.
In a small bowl, add the corn starch and 1/4 cup of whipping cream and whisk until smooth. Then add the heavy whipping cream/ corn starch mixture to the pot with the onions, garlic and butter. Stir.
Add in the remaining heavy whipping cream and black pepper.
Whisk this continuously on low heat until thick. With a slotted spoon, pull out the garlic and any large pieces on onion. You don’t want to eat that! Once the garlic and onion pieces are removed, whisk in some bleu cheese crumbles until you get the preferred amount of bleu cheese taste. Some like it stong, some like it mild.
Layer on a plate the chips, the bleu cheese sauce and crumble some bleu cheese right on top. You could get fancy and top with diced green onions and crumbled bacon!
