Chicken Tikka Pizza

When Italian meets Indian cuisine, the outcome is delicious. I managed to turn a traditional Indian dish, Chicken Tikka, into an Italian specialty, pizza. This was a delicious spin and it was a great was to use up my Chicken Tikka left overs!  It was so simple. Let me tell you about this pizza crust! Even if you do not like Indian food, make any homemade pizza with the pizza crust I use in this recipe. You will not be sorry!

You will need: 

Chicken Tikka leftovers (chicken with the sauce)

1/4-1/3 cup of shredded cheese (I used a Mexican blend)

1 TBSP grated Parmesan Cheese

1 Piece of Naan (Indian flat bread. I get mine in the freezer section)

1 tsp. Olive Oil

1 Sheet Aluminum Foil

Preheat oven to 430F

For the Chicken Tikka Leftovers, I used a store-bought spice mix (limited on ingredients on the island). I will post a Chicken Tikka recipe in a few months, once I return home.

Alright, for the crust. Take the piece of Naan and brush both sides of it with Olive Oil. Then place it on the piece of foil. Pop it in the oven for 3 minutes to get the “pizza crust” ready for topping. If you put the sauce on before you precook your crust, your Naan will turn soggy and disgusting. Putting the Naan in the oven for 3 minutes will allow proper crisping of the crust to get that amazing crunchy pizza crust.

After 3 minutes in the oven, take it out and top with enough Chicken Tikka Sauce to cover the Naan. I left a little room at the edges so I can pick up the pizza slice without getting my fingers all saucy.(If you are not into Indian food at this point, spoon on some tomato sauce, cheese it up and add your toppings…this crust though, is pretty awesome!)

Sprinkle on the shredded cheese and top with pieces of chicken from the chicken tikka.

Finally, sprinkle the pizza and the crust with parmesan cheese.

Pop it back in the oven for about 7 minutes. This will finish crisping the crust, melt the cheese and re-heat the leftover chicken.
