Cheesy Hasselback Chicken

What could be better than gooey, melty cheese slathered all over a piece of chicken?  This recipe takes a whole 5 minutes of prep, 20 minutes in the oven and you have dinner in a flash. It is just so delicious.

I made 2 pieces of chicken, this recipe can be used to make 1 piece of chicken or feed an army. This recipe is for 1 chicken breast, just multiply the recipe to feed the number of people you choose.

You will need:

1 chicken breast

3 baby portobello mushrooms (sliced) (If you don’t like mushrooms…zuchinni, potatoes, onions, bacon, or ham would be good too!)

1 oz cream cheese (took an eight ounce block and divided it into eighths)

1/4 cup of cheddar cheese

Salt ‘n’ Pepper to taste

Preheat oven to 350F

Line an 8’x8′ pan with foil (with this much cheese, you don’t want to have to do dishes later…trust me).

Place in the chicken breast and make about 5 slits in the chicken breast. Do not cut the chicken all the way through. Sprinkle with salt ‘n’ pepper.

Next take the 1 oz of cream cheese and slice it into 5 tiny equal pieces. Place each piece inside the slits of the chicken breast. Do the same with the mushroom slices, stuff them inside each slit.

Now for some more cheese, dump the cheddar cheese on top. hasselback chicken 2

Pop it in the oven, uncovered, for about 20 minutes.
