Saying I love onion rings, well, that is an understatement. I love these things. I am also very particular about my onion rings as well and so being picky about them made me figure out how to perfect them! These are similar to a popular chain restaurant, Red Robin, but in my own (and un-biased opinion), I think these give them a run for their money.
These are perfect as a side dish to some awesome burgers or as a garnish on top of a big ol’ juicy steak.
You Will Need:
1 large Vidalia onion
1 cup of pancake mix (I prefer Hungry Jack Complete “Just Add Water”)
1 cup of water
1 cup of Panko bread crumbs (Japanese bread crumbs…super light and super fluffy)
3-4 cups of Vegetable Oil or Canola Oil for frying
Pinch of salt
First thing first, you need an onion!
Next, slice the onion into 4-5 large slices. Make sure you cut with the onion layers and not against them. Be sure to separate each onion ring, I got about 20 rings from 1 onion.
Start heating up your oil. I used a medium-sized pot and set the burner on a medium heat.
Now to prepare the dredge stations! In a pan, plate or bowl…place the Panko bread crumbs.
In a separate bowl, mix together the pancake mix and the water. It’ll be a little thinner than the typical pancake mix, that is perfect!
Next, take one of the rings and dunk it into the pancake mix.
Then place it right into the fluffy pile of Panko Bread crumbs.
And plop it right into the hot oil (delicately…don’t want to splatter hot oil on yourself). Tip: if your oil is not hot enough, the batter will come right off of your onion. Be sure to check your oil before placing in the onion ring.
Once these bad boys are golden brown, remove them from the oil (you can place them on a paper towel to remove any excess oil) and sprinkle with bit of salt.
Easy enough, right?
